have downloaded Nvidia drivers and they have failed
to recognise the videocard. I have wiped Vista off
MacPro after that.

Bear in mind that Vista (x86 and x64) will not properly install unless one has both the A and B Memory Risers populated with at least one matched pair of FB-DIMMS.
Get yourself another matched pair of FB-DIMMS for Riser B and Vista will properly understand how to recognise the 7300.
If you want, you can then install the nVidia-supplied drivers for the added functionality they might provide.
